Summer Cocktails: The Pimm’s Cup
Despite my high hopes in the spring, I have exactly two plants thriving in my vegetable garden at the moment. One is mint, which grows like a weed no matter how black your thumb is, and the other is cucumber. That seems like as good an excuse as any to make a batch of Pimm’s cups this weekend. If you’re not familiar, Pimm’s No. 1 is a gin-based liqueur that’s been infused with a mix of herbs and fruits. Mix it with ginger beer and some of your garden produce and you have a pretty perfect summer drink.
THE PIMM’S CUP
- A couple sliced cucumber rounds
- Lemon wedge
- Strawberry
- Mint sprig
- 2 ounces Pimm’s No 1
- 4 ounces ginger beer (bitter lemon and sparkling lemonade work well here, too)
Add your garnishes and ice to a glass. Pour in Pimm’s and stir a couple of times. Finish off with ginger beer.
