Maple Nut Granola
Homemade granola is one of my favorite recipes to make during the winter. I enjoy making it because it’s such a versatile and healthy food that takes pretty basic ingredients and turns them into sweet, crunchy goodness! I typically add dried fruit to my recipe, but I wanted to go with a version that was chock full of some of my favorite nuts. I also subbed out the honey and used maple syrup. I was so glad that I did! This granola is perfect in yogurt, as a cereal or by itself as a snack!
Maple Nut Granola makes 4-6 cups
Ingredients:
2 cups old fashioned oats
1/2 cup vegetable oil
1/2 cup 100% maple syrup
dash of cinnamon
1 teaspoon vanilla
1/2 cup chopped walnuts
1/2 cup chopped pecans
1/2 slivered almonds
Directions :
Pre-Heat your oven to 350 degrees. In a large bowl, add the oats and mix in the dash of cinnamon. In a small bowl add the oil, maple syrup and vanilla and whisk well. Pour the maple syrup mixture into the oats until coated. Then add the walnuts, pecans and almonds. Next add the oat mixture to a baking sheet. Spread the mixture evenly onto your baking sheet so that the granola can bake evenly. Bake 30-40 minutes or until the granola becomes a nice, toasty golden brown. ** I turn the granola about halfway through to allow for both sides of the granola to toast. Cool, then store in a sealed container. Enjoy!
