Lomo Saltado!
Here’s a delicious dish from South America (PERU). If you ever get the chance try it it is truly amazing, especially if they use fillet mignon for the beef. You can also substitute chicken for the beef which is my favorite. You could even add extra vegetables such as summer squash, broccoli, and cauliflower to make a vegetarian version.
I was born and raised in Peru and this is one of our staple dishes. If you ever get the chance to visit a Peruvian or Latin American recipe, this meal will really “wow” you!
