Lemon Trifle Pies
What better way to celebrate Easter and Springtime than with lemony desserts? I put together this super easy dessert to help you round out your Easter dessert table or any other Spring festivities you’re having this season. Get ready to wow your family and friends with this easy, delicious recipe!
Lemon Trifle Pies~ serves 4
Filling:
2 (ten ounce) containers of Dickinson’s Lemon Curd (found on the jam aisle)
1/4-1/2 cup of whipped topping
Crust:
20 shortbread cookies
1 tablespoon melted butter
4 trifle bowls
Berries to garnish (optional)
Directions:
Mix the lemon curd with the whipped topping (1/4 cup more tart; 1/2 cup less tart) and set to the side. Take the shortbread cookies and crush them in a ziplock bag or in your food processor. Place the crushed shortbread cookies in a bowl and mix in the butter. Take approximately 1/4 cup of the shortbread cookie mixture and press into each trifle bowl. Add 1/4-1/2 cup of lemon mixture to each trifle bowl. Top with whipped cream and your favorite berry. Serve when finished assembling the pies or cover with plastic wrap and refrigerate until ready to serve.
