Chocolate Cake

Valentine’s day is this week and February is National Chocolate Month. What better way to celebrate the month of love than with this delicious chocolate on chocolate cake!! There is something about a basic layer cake that is not only comforting, but a chocolate one is kinda romantic as well. So get out your cocoa and cake pans and get baking!

Chocolate Cake Recipe by King Arthur Flour
2 cups of King Arthur Cake Flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

3/4 cup unsweetened cocoa powder

1 3/4 cups granulated sugar

1/2 cup softened butter

1/3 cup vegetable oil

1 tsp vanilla extract

1 cup milk

1/ 2 cup water ( you can also use brewed cooled coffee if you don’t want to use water)

4 large eggs

Sift the dry ingredients into your mixing bowl~ flour, sugar, baking powder, baking soda, salt, and cocoa. Add the butter and mix on low speed until blended. Then add the oil. The mixture will have a sand-like texture. In a large mixing cup or bowl add the vanilla, milk and water. Add the milk mixture to the dry mixture and mix well. Next add the eggs one at a time. Make sure you beat well after adding each egg. Don’t worry if the batter is thin, that is the consistency you are looking for.
Pour the batter into two 9 inch cake pans. Add any leftover batter to muffin tins for cupcakes. Bake at 350 degrees for 25-30 minutes. Insert a toothpick to check if the cake is done. The cake is ready when the toothpick comes out of the cake clean. Cool the cakes then frost with the chocolate buttercream frosting.

Chocolate Buttercream Frosting

1 package of powdered sugar

1/2 cup of butter (softened)

1 tsp vanilla

3 tbsp unsweetened cocoa

2- 3 tbsp of milk

Add the powdered sugar and butter to a mixing bowl and mix until smooth. Add the vanilla and cocoa and mix until blended. Add the milk one teaspoon at at time until you reach the desired texture.
