CHAMPIONSHIP GAME – Football and Food
For the first time in the history of the Bowl Championship Series (BCS), two teams from the same conference, Alabama and LSU, will play one another. Just in time for this historical match up between these two SEC teams, The Southern Coterie has some recipes for our favorite game time munchies! Let’s begin with:
Warm Feta and Artichoke Dip

1 (14 ounce) can artichoke hearts, drained and chopped
5 ounces feta cheese, crumbled
1/2 cup of mayonnaise
1/2 cup grated Parmesan cheese
1 (2 ounce) jar chopped pimentos, drained
2 cloves of garlic, minced
Pita chips, Melba toast, corn chips or white
corn tortilla chips, for dipping
Sliced, toasted French bread
Preheat oven to 350 degrees. Spray a pie plate with non-stick cooking spray. In a separate bowl, combine the artichoke hearts, feta, mayonnaise, Parmesan, pimientos and garlic until well blended. Transfer to the pie plate and bake at 350 degrees, uncovered, for about 25 minutes or until bubbly and lightly browned.
Serve with pita chips, melba toast, corn chips, or tortilla chips, or spread on sliced, toasted bread.
Chili Cheese Dip
2 blocks of cream cheese, softened
2 cans of chilli
1 cup of grated sharp cheddar
Spread the cream cheese in a dish, evenly distribute the chili over that then sprinkle cheddar cheese on top. Bake at 350 degrees for 15-10 minutes until bubbly. Serve with corn chips.
Though I have one at Ga Tech, and the other at Alabama, all I have to say is Geaux Tigers, and pass the dip!! 😉
