Betsy and Chad Albright, both teachers, share an affinity for cooking, travel and new experiences. This past summer they decided to cook across America with the plan that Betsy would blog the adventure of cooking a meal or dish from each state.
The underlying goal was to officially learn the blogging ropes and be able to run a successful classroom blog during the school year. What resulted organically was an inspiring project that many enjoyed.
For Betsy and Chad, it was a course in United States history, since most culinary, signature dishes originated in historic facts or events.
Though Betsy’s teaching career spans 17 years, she holds the belief that you are always a lifelong learner, “I tell my students you never stop learning.”
Betsy Albright launched Happily Ever Albright over the summer, welcoming readers with typical Albright enthusiasm, “Summer Vacation is here! We have 63 days to enjoy a little fun in the sun before returning to our classrooms! So, with lots of free time and a limited budget we are planning to cook our way across the country.”
